July 27 . . a Sunday
I'm getting lazier. Where did that get so much done in a day lady go? I think I must really need some relaxation and down time because that seems to be what my whole weekend is about. Even my vacations are go-go-go.
I scrapped four layouts to begin my day. I intended on going to church, but somehow that did not even happen.
I managed to get up and hubby and I made some blueberry scones together.
I mixed 2 cups bread flour, 1/2 cup sugar, 1 tablespoon baking powder, and salt. I'm not sure what makes it bread flour and I need to use it up.
Then I cut in 1 stick (1/2 cup) of butter. I learned a new trick from watching a Youtube video! So excited about this as I'm going to do it this way from now on. I put the stick in the freezer and I used a grater. Wow! So much easier than using a fork the way I used to do it and it works so much better too. I'm anxious to try this method to make a crumble for a muffin or cake now.
Here is the grated butter for cutting into the flour. The tip said to mix it in every so often, but I had fun making a mound of it and it still worked well.
In another bowl we mixed 1 large egg, 1/2 cup sour cream, and 1 teas vanilla.
Then I mixed the wet into the dry, added a cup of blueberries, and some lemon peal.
I did all the mixing by hand. I think the mixer would have messed it up.
I kneaded it a little with my hands and then formed it on the counter into a rectangle. I cut it in half both ways and then cut each corner into triangles.
I baked it at 400 for about 20 minutes, going over the 18 called for in the recipe I was reading.
I mixed some powered sugar and made a glaze with some lemon juice. Yum!
Oh my goodness, these were SO good and we could not eat just one, so it was a good thing it was 3 p.m. and I hadn't eaten anything.
Ahhhhhhh! So delicious!
I also spent time late at night on another project towards some new videos here for Hummie's World. I've had this idea for a while, but just now took time to play with it. So glad it worked! It is an idea to record videos of my phone.
